In the heart of Adelaide, nestled on Gilbert Place, you'll find Hains & Co. This gin and rum bar, with a penchant for whisky and cigars, opened its doors in 2015 and has been charming patrons ever since. Recently, we had the pleasure of sitting down with Marcus Motteram “The Admiral,” to delve into the story behind Hains & Co.
Stepping into Hains & Co
From the moment you walk off the street into Hains & Co, you're enveloped by a warm, familiar buzz. The playful nature of the venue, infused with nautical history and the sounds of laughter, creates an inviting atmosphere. The staff, known for their friendliness and extensive knowledge, contribute to a vibrant and welcoming vibe that keeps patrons coming back.
Upstairs, Hains & Co boasts a private whisky bar. This exclusive space hosts numerous spirit tasting events and masterclasses, making it a hub for whisky enthusiasts.
A Passion for Spirits
Marcus’s love for spirits is palpable. One of his favourite distilleries he tells us is Dailuaine, particularly the "Infrequent Flyers Single Malt Scotch Whisky" aged in a bourbon barrel. "You're going to get some lovely rich buttery pastry notes from it, a little bit of coconut in it. But also, just a spirit that sits at cask strength at 13 years old. It's just delish," Marcus shares.
His journey into hospitality began, when his brother asked him to pick up glasses at a bar. "I loved it and I’ve done it ever since. But really why I do what I do is I get an absolute kick out of lifting people's spirits and giving people a good time. That feeds my soul."
The Role of bepoz
Running a successful bar requires more than just passion; it demands efficient management and support systems. Marcus recounts his experience with various POS systems: "When I first started Hains & Co, I was utilising a POS system that I had been using for the last 20 years. But I found that it wasn’t being updated, and I didn’t feel we had the support that we needed."
After experimenting with a cloud-based system, Marcus ultimately chose bepoz. “the system needs to be fast, we’re a very busy bar, we can’t wait for lag that’s why cloud based systems will not work for us. bepoz is quick, we’re a quick bar and that’s what we need”.
"I love bepoz because of the data you can get out of it, all the different things it can create in terms of reports. The fact that it can email them to you at certain times is super powerful."
Especially valuable for Hains & Co is the seamless integration of their many different whiskies into bepoz, which communicates with their web page to dynamically update menus. "It's absolutely fantastic that I can go into one spot to do all those things," Marcus adds.

Hains & Co isn’t just a bar; it’s a place of celebration. Marcus explains, "One of the things I love about hospitality is that people come here to celebrate. They're celebrating life in many different ways. Whether that's the end of the day, finishing up a job, a new child, or getting married. We offer celebrations for people to lift their spirits."
With the support of bepoz, Hains & Co can focus on what they do best: creating memorable experiences for their customers. "OOLIO is a bit of a one-stop shop. We have bepoz and OOLIO Pay together in one package. It also on-charges the merchant fee, which is really important to us because of the additional costs of absorbing those continually just became too much."
